I've been going a little heavy on the sweets lately, both in life and on the blog. Soooo, it being the New Year and all, and time for a detox of sorts, I decided it best (for all of our sakes) that I post some savory dishes! At first, I considered Stewed Chicken with Dumplings, but thought better of it, knowing you're probably all still gagging at the thought of turkey or any of its relatives. Instead, I’ve opted to post a fish dish.
Typically, my cod dishes tend to go one of two ways - fried with scrunchions and drawn butter, or mashed up in some fish and brewis. But a few weeks back, I found myself craving Cod au Gratin. Now, in all honesty, I had never made the dish myself and had not had it in several years, but I’m proud to say it came out tasting just as delicious and creamy as I remember from home.

- 1/2 cup Butter
- 1/2 cup Flour
- 2 1/2 cups Milk
- 2 Onions (finely chopped)
- 2 tsp Salt
- 1/2 tsp Pepper
- 2 lbs Cod Fillets (you can use salt cod as well, just leave out the salt when seasoning, and break down thicker pieces of fish to avoid concentrations of salt)
- 1 cup grated Cheese
- 1 cup Bread Crumbs
1) Preheat the oven to 350 degrees F. Melt butter in saucepan; whisk in flour until smooth.
2) Add milk, onion, salt and pepper. Stir until thickened and smooth (Before and after pictured below).
2) Place fillets in greased casserole dish (or in this case I used individual dishes). Pour sauce over fish and sprinkle with the bread crumbs. Bake at 350 degrees for 30 minutes.

3) After your 30 mins are up, sprinkle with cheese and return to oven for 20 minutes longer.
And last but not least, allow to stand and cool slightly for approx. 8 minutes - just so you or your fam-jam or any other guests, won't burn your tongues off ;)
