Snowballs



Favourite traditional foods and snacks vary across the province just as much as the accents and sayings, but one 'cookie' you'll find commonplace in every Newfoundland community, is the snowball. I don't know what it is about snowballs but people love them! And let me tell you, you'd be hard-pressed not to find snowballs in someones house during Christmas... that is of course unless they've already polished them off or haven't gotten around to making them yet ;)

These snowballs are amazingly delicious and total crowd pleasers. Every time I've made them I've received nothing but compliments on how good they taste and everyone always asks for the recipe. Once upon a time I didn't like coconut. To think what I was missing out on!


I've been making this recipe since they were featured with our Candy Buffet at our wedding back in 2011. Original recipe from Rock Recipes.

Ingredients
  • 3 cups Sugar
  • 3/4 cup Melted Butter
  • 1 1/4 cup Milk
  • 3 cups large Rolled Oats
  • 1 cup Unsweetened Fine Coconut, plus extra for rolling!
  • 12 tbsp Cocoa
Makes about 4 dozen.


Instructions

1) In a large saucepan, combine sugar, melted butter and milk & boil together gently over medium-high heat for 5 minutes or until mixture reaches about 230 degrees F on a candy thermometer.



2) Once mixture begins to boil it is very important not to stir it at all



3) In the meantime, mix together rolled oats, coconut & cocoa





4) Add the boiled mixture to the dry ingredients, mix until well combined & chill well until mix is able to be shaped into 1 1/2 inch balls.








5) Roll the balls in additional coconut.

Be sure to store them in the fridge, they also freeze very well!
