It's also really easy, and pretty quick to make.
Ingredients:
- 2 cups Potatoes, cubed
- 2 tbsp Butter
- 1 Onion, diced
- 3 cups Water
- 2 tsp Salt
- dash of Sugar & Pepper
- 1 lb Fish (I've only ever used Cod, but I'm sure other fish could work as well)
- 1 cup Evaporated Milk
Instructions:
1) Combine potatoes, butter, onion, water, salt, sugar and pepper - everything but the fish and milk. Boil gently for about 15 minutes, or until potatoes begin to soften.
2) Next, add fish and simmer gently until fully cooked (about 10 minutes). As you can see in the photo below, these are fishies some lovely person in my fam caught, so they are skin-on - if you have skin on your fish, it should peel right off once your fish starts to cook.
After you've peeled off the skin, break up the fish lightly to the size of the potatoes.
3) Your last step is to add the milk and heat slowly. Be sure not to boil.
Serve it up with some additional pepper and be amazed at how good such a simple recipe can taste! So much flavour! Especially when using yummy Newfoundland cod ;)
